Dear friends,
Starbucks has recently changed a lot of their pastries in the US (and potentially elsewhere) to be made with more natural and healthy ingredients. Part of their awareness campaign is to publish their recipes and I have found and picked up two of these recipe cards. I’m not sure if you can get them in Canada, so I decided to post these recipes on tumblr for you guys to enjoy.
So without further ado, here are the recipes for Outrageous Oatmeal Cookies and Banana Walnut Bread (both recipes are verbatim off the cards, with the exception of anything between [ and ]):
Outrageous Oatmeal Cookie
- 1.5 cups old-fashioned rolled oats (not quick-cooking)
- 1/2 cups all-purpose flour
- 1/4 cups dark raisins
- 1/4 cups golden raisins
- 1/4 cups dried cranberries
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 6 Tbsp unsalted butter, room temp
- 1/2 cups packed dk-brown sugar
- 1/4 cups granulated sugar
- 1 large egg
- 1/2 tsp ground cinnamon
- 1 tsp pure vanilla extract
- 4 Tbsp dark raisins (topping)
- 4 Tbsp golden raisins (topping)
Preheat oven to 350°[F]. Blend together oats, flour, raisins, cranberries, baking power, baking soda, and salt; set aside. Beat butter and sugars until light and fluffy. Add egg, cinnamon and vanilla; beat until combined. Gradually add oat mixture; beat until combined. Combine raisins for topping in separate bowl and set aside. Drop dough by rounded tabelspoonfuls, 2 inches apart, onto two baking sheets. Place 1 mounded teaspoon of raisins on top of dough. Bake until cookies are golden brown but still soft, 12 to 16 minutes. Cool 5 minutes on sheets; transfer cookies to a wire rack to cool completely.
Banana Walnut Bread
- 2 cups flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1 1/8 cups sugar
- 1/2 cups vegetable oil
- 2 Tbsp buttermilk
- 1/2 tsp vanilla extract
- 3 ripe medium-large bananas (mashed)
- 1/2 cups + 1/3 cups chopped walnuts
Pre-heat the oven to 325°[F]. Grease a 9x5x3 [inches] loaf pan and dust with flower. Blend together the flour, baking soda, and salt and set aside. Mix together the egg, sugar, and vegetable oil until combined. Add the flour mixture and when blended add the buttermilk, vanilla, and mashed bananas and mix until combined. Fold in 1/2 cups chopped walnuts and pour batter into prepared loaf pan. Top batter with remaining 1/3 cups chopped walnuts. Bake for 45 to 60 minutes, until a toothpick inserted in the center comes out clean. Cool for 10 minutes on a wire rack before removing from pan.
